Abstract
Coffee known as gahwa is one of the most frequently consumed beverages worldwide, although there are some concerns related to the negative aspects of its excessive consumption, in particular to the addictive and stimulating effect of caffeine. The inedible parts of date is often discarded as waste and it is contain valuable bioactive compounds, utilization of this by-product is highly desirable as coffee substitute from economical and health-care points of view as Functional beverage . So,
Present study is an attempt to explore the nutritional and phytochemical profile of date seeds (agro-waste), its utilization in food by-product development as Non Caffeinated Coffee Powder. It was clear that there are significant differences in proximate composition such as caffeine content, carbohydrate, protein and fat between developed date seed powder and other commercial coffee powders. The comparison analysis shows that the commercial coffee powder samples was very high in caffeine content than the date seed coffee powder.
